Ingredients
  

Chicken Marinade
  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • to taste salt
  • to taste pepper
Toppings
  • 1 cup pico de gallo
  • 1 cup shredded cheese (cheddar or a blend)
  • as needed tortillas or rice for serving

Method
 

Marinate Chicken
  1. In a bowl, mix lime juice, olive oil, garlic powder, onion powder, cumin, salt, and pepper together.
  2. Add the chicken breasts to the bowl and coat them well. Marinate for at least 30 minutes.
Grill Chicken
  1. Heat a grill or grill pan to medium-high heat.
  2. Grill the chicken for about 6–8 minutes on each side, until fully cooked (165°F / 74°C).
Serve
  1. Top the grilled chicken with pico de gallo and shredded cheese, then cover for a minute to melt the cheese.
  2. Serve warm with tortillas or rice, adding lime wedges and extra pico de gallo if desired.

Notes

For best results, marinate longer (2–4 hours) for more flavor. Pat the chicken dry before grilling for better sear. Use a meat thermometer to avoid overcooking. Let chicken rest for 5 minutes after grilling to keep juices. Warm tortillas before serving for easier folding.
