Ingredients
  

Mushrooms and Seasoning
  • 4 pieces Portobello mushrooms Choose firm and unblemished mushrooms.
  • 2 tablespoons Olive oil Use for brushing the mushrooms.
  • 2 cloves Garlic Minced.
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.
Cheese and Sauce
  • 1 cup Marinara sauce
  • 1/2 cup Parmesan cheese Grated.
  • 1/2 cup Mozzarella cheese Shredded.
Optional Ingredients
  • 2 cups Pasta For serving.
  • 2 cups Salad For serving.

Method
 

Preparation
  1. Preheat the grill or oven to medium-high heat.
  2. Clean the portobello mushrooms and remove the stems.
  3. Brush the mushrooms with olive oil and season with garlic, Italian seasoning, salt, and pepper.
Cooking
  1. Grill the mushrooms for about 5-7 minutes on each side until they are tender.
  2. In a baking dish, layer the grilled mushrooms with marinara sauce and top with Parmesan and mozzarella cheese.
  3. Bake in the oven at 400°F (200°C) for about 15-20 minutes until the cheese is bubbly and golden.
Serving
  1. Serve over pasta or alongside a crisp salad.
  2. Add a sprinkle of extra Parmesan or fresh herbs like basil just before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
